Ham and corn muffins (makes about 12)
|2 cups S.R flour 200mls milk|
|2 spring onions chopped 1 tbs canola or olive oil|
|1 carrot grated 2 eggs beaten|
|1 cup grated cheese 3 slices of ham ,diced|
|420g creamed corn|
Combine flour, spring onions, carrot, half of cheese, ham and the
corn in a large mixing bowl.
Blend milk oil and eggs in small bowl then add to mix and blend well.
Spoon the mixture into oiled muffin pan. sprinkle with the remaining cheese.Bake in hot oven (200c) for 25-30mins.

Tomato and Onion Tarts
|1 sheet of puff pastry||half capsicum diced|
|2 tomatoes, sliced.||grated cheese|
|1/2 red onion||seasonings to taste|
|1 or 2 mushrooms, sliced|
|Cut pastry into quarters. Roll edges in a little to form a raised edge. Place on a lightly oiled baking tray.|
|Fill with vegetables, top with seasonings and cheese. Bake in moderate oven (180c) for 10 to 15 minutes or until pastry is puffed light and golden. ( make up what ever combination of things you like).|

|1 x 16cm pizza base||1 rasher bacon, chopped|
|2 tbls pizza sauce||1/4 green capsicum, thinly sliced|
|2 tbls grated cheddar cheese||1/4 red onion, thinly sliced|
|Place pizza base on oven tray, spread evenly with
sauce. Sprinkle with cheese. Place other ingredients on pizza base. Cook
in moderately hot oven 190c for about 20 minutes or until base is
